WEEK 9 - PRESENTATION ABOUT FOOD PRESERVATION

Assalamualaikum guys! =)

By this week, Dr ask us to do presentation about food preservation techniques. The first group were presented about food irradiation. Food irradiation is the process of exposing foodstuffs to ionizing radiation, energy that is transmitted to the food without direct contact capable of stripping electrons from the food. This treatment is used to preserve food. Below is a symbol used for irradiated food:


The second group were presented about food fermentation. Personally, this group was very good in their presentation especially Achoi and Aqi. Their presentation were very attracted me to focus. Hehe. The third group were presented about chemical preservation. Many chemicals will kill microorganisms or stop their growth but most of these are not permitted in food; chemicals that are permitted as food preservation such as lactic acid, citric acid, acetic acid, sodium diacetate, sodium benzoate, sodium propionate, sodium nitrite and sulphur dioxide. Chemical food preservatives are those substances which are added in very low quantities (up to 0.2%) and which do not alter the organoleptic and physico-chemical properties of the foods at or only very little. Next group is my group which discuss about drying process.  Actually, I had discuss this process in my blog before. Briefly, drying process is a method of food preservation in which food is dried. Drying inhibits the growth of bacteria, yeast and mold through the removal of water. During my group had our presentation, Dr has added and shared about the technique with using spray drying machine. It can produce powder from Durian seed. For me, this is something new information because before this I know that spray machine only can produce powder from liquid material. But now it can produce powder from solid material. Thank you Dr for your information. Okay next, the fifth group were presented about microwave. Honestly, I'm not focus during their presentation. Sorry guys. Hehe. For my own research, in microwave drying, heat is generated by directly transforming the electromagnetic energy into the kinetic molecular energy, thus the heat is generated deep within the material to be dried. Thank you!
